Not everyone likes eggplants, but in vain - this is a very fragrant, pleasant and healthy vegetable, which is abundant in stores, in the garden and in the markets in summer and autumn. If you still do not like eggplants, or you want this vegetable to be tasted and appreciated, then we suggest you try the recipe for a very tasty eggplant snack. It is difficult to stop at a single serving — I want to cook more and more until the eggplant stocks are exhausted.

For an eggplant snack, prepare the following foods:

  • 4-5 medium eggplants (0.8-1 kg);
  • spices to taste (in the recipe dry garlic, Provencal herbs, chili);
  • greens to taste (in the recipe cilantro);
  • salt to taste (in the recipe 1 tsp.);
  • 4-6 Art. l vegetable oil.

Start cooking eggplant snacks:

1. We wash the eggplants, cut off their tails and cut them into large cubes. Immediately prepare the spices and to start 2-3 tbsp. l oils.

2. Mix spices, salt and 2-3 tbsp. l oil with eggplant. We shift on a baking sheet and send in the oven, preheated to 190 degrees, for 15-20 minutes (check the readiness with a knife, eggplant should be soft).

3. Take out the eggplants, leave to cool to room temperature. Then finely chop the greens (cilantro in the recipe), add to the prepared eggplant. Also add 2-3 tbsp. l vegetable oil, mix.

4. Leave the eggplant snack for 1 hour so that it is infused and absorbed all the flavors, then served to the table.
